You can cook cheese from any fermented milk product. From sour cream cheese will turn out fatter, and from kefir more dietary. Fermented baked milk will give the product the flavor of baked milk. You can experiment and mix kefir with ryazhenka or sour cream. Remember that the percentage of fat in the finished cheese will be greater than in the raw material.
Send a pack of ryazhenka, kefir or sour cream in the freezer overnight. The most convenient way is to buy kefir in a package - it is easier to cut it after freezing. In the morning, take the kefir and hold it a little under hot water. After putting the gauze in a colander and place it over a deep bowl or pan. Put the cheese mass and wait until it melts.
Leave the mass for 2-3 hours at room temperature, and then place in the refrigerator for 8 hours. Pre-cover the colander with the future food grade plastic film so that the mass does not absorb foreign odors. If you want the cheese to be thicker, you can hang it on gauze. But for the cream cheese enough whey drip in the fridge.
If you need a creamy texture, beat the finished cheese in a blender or mixer. But in itself it will be quite mild. In the finished cheese, add salt or sugar to taste. Serum obtained in the manufacture of cheese can also be used - it has a lot of useful substances.
